The first thing I have to say is that either of these two Instant Pot models is excellent. I would be happy to recommend either one of them to friends and family.

In terms of appliances and smart programs, these two are comparable (besides the pasteurized function). However, the Duo Nova, like the Duo Plus and Duo Ultra, has an updated screen.

Another significant change is that the Duo Nova now comes with an auto-sealing lid. This is a more secure safety mechanism, and it’s wise to ensure as much protection as possible when pressure cooking.

It’s not uncommon for someone to forget to turn the valve to seal before starting to pressure cook. That is why all new Instant Pot models now feature this function. It is safer and ensures that your food cooks properly.

What’s new about the Duo Nova Instant Pot model? The Duo Nova comes with an extra sealing ring (so two sealing rings instead of one), a measuring cup, and a steam rack meaning you get more accessories than you do with the Duo.

The fact is that both are excellent. If I were shopping for a new pressure cooker and were deciding between the two, I would more than likely go with the Duo Nova.

However, there isn’t anything between them, and I would happily have either in my kitchen. If you want to save a little money or need the pasteurize option, then the Duo might be a better choice for you.

Both models are great so it really all depends on what you want from a pressure cooker which will determine which one you purchase.
